While brainstorming new dish ideas we became fixated on Jewish deli items: smoked salmon lox with dill, pastrami, latkes with horseradish cream, etc. This dish was conceived as a great way to bring all of those ideas together. A fresh fillet of salmon is rubbed with a housemade pastrami spice blend, then seared and roasted. It gets plated with asparagus and latkes, the traditional potato pancake with a hint of cumin, dill, and caraway. A creamy horseradish aioli adds a nice kick to everything on the plate.
