I have tasted many roasted vegetable salads and this one was very disappointing. There needed to be more arugula. The vegetables would have tasted better if they were roasted longer or grilled. The dressing was too thick, almost like a chutney.

Some of the vegetables weren't cooked well and others were overcooked but the sauce with the dish was yummy
