We steam Israeli couscous until tender and fluffy, then toss it with a green-herb sauce to brighten up the flavors. The pan-seared, sustainably raised Atlantic salmon is garnished with a roasted grape tomato relish (with red onion and fennel) made with tomatoes from Sun Haven Fram in New Jersey, then topped with a light drizzle of saffron aioli.
