Salmon is marinated in a Southeast Asian inspired cilantro pesto spiked with chili and mint. It's served over steamed coconut rice tossed with roasted red peppers and green beans. Because you can never have enough sauce, we've provided more pesto on the side plus a small shot of soy sauce for the rice.

Loved this dish. As always I did not cook the salmon at all. Just the rice and vegies. Splashed a little water on the rice for reheating. Came out great!
