A coastal version of the classic layered rice dish from India. Plump currants, toasted almonds, fresh herbs, and fried shallots are folded into Himalayan basmati. The prawns get coated in a traditional yogurt-based tandoori marinade, then dry-roasted at high heat to mimic the char from a clay oven. Tangy mango chutney is served on the side along with a fresh veggie slaw tossed with mint and lime.

This was by far my favorite meal. I usually save half for later. I ate the whole thing. It was so tasty. Love the chutney. Would have loved twice as much of that. Bonus points for glisten free.
