Shrimp boils are a favorite pastime in the Carolina Low Country. As the name suggests, local shrimp are boiled with corn, sausage, and potatoes, then laid out on picnic tables topped with newspaper for easy serving and clean-up. We went with a more refined version hereā€”the classic ingredients are all present, but in salad form. Arugula forms the base, while red onion and tomatoes tossed in tarragon bump up the fresh flavors. A zesty remoulade dressing ties everything together.
