Every spring, locals anticipate the annual tuna migration off Sicily's northern coastline. On long voyages, fishermen would prepare pots of simmering "marinara" (which actually means "sailor's sauce" in Italian) to make an impromptu stew with their catch. This dish was inspired by those "one pot wonder" meals served at sea. We start with fresh fennel bulbs and onions in a saute pan with extra virgin olive oil. Next, we add tomatoes, saffron, and Yukon Gold potato and let this simmer for a bit before finishing this meal with poached shrimp and albacore tuna. A tasty, olive ciabatta roll and fresh basil are provided on the side. I'd like to think that Sicilian fishermen would approve, hopefully you do as well.
