Some chefs go to great lengths to recreate "authentic" dishes. Other chefs like to think outside the box. We chose the latter when we combined the best of, not just both, but several worlds while creating this plate. Latin flavors like ancho chile and lime, plus North African spices of smoked paprika and cumin all get aggressively rubbed on tri-tip steak. After a sear on the grill, the steak gets covered in a tangy Northern Italian/Southern French style herb sauce. Alongside the steak is a summery mix of grilled squashes and braised butter beans with caramelized onions. The recipe may not be authentic, but it sure is tasty!
