Great Southwest flavored chili packed with pinto beans, black beans, and kidney beans as well as yellow hominy. The chili is spiced up with ancho chili, cumin, and chipotle in adobo, then simmered down with veggies, tomatoes, and vegetable broth. On the side it's served with cotija cheese, a lime wedge, non-fat Greek yogurt, and a corn pudding that has a little hint of goat cheese in the center. Eats like a great meaty chili but doesn't leave you too filled up. Enjoy!
