This soup was inspired by the many versions of "daal" in Indian cuisine. Red lentils are cooked until plump, then simmered in coconut milk with Kashmiri chili, coriander, and ginger. Topped with some green onion and cilantro for freshness, add a squeeze of lime and save the mini-pita for dipping!
