with pancetta, croutons & parsley pesto

We start by sauteeing some pancetta in olive oil, then add carrots, celery, onion, and garlic. Once the flavors build, we toss in kale, cannellini beans, and spring peas. Lastly, some croutons and a swirl of bright, lemony parsley pesto livens things up!

It's fine. Without the pesto, it takes like any other vegetable soup out there (tastes like veggie broth/garlic/usual flavors). The pesto by itself is fantastic, gets a bit lost when mixed in. Average.

I like so many things at Munchery, and I am a regular customer for over two years now. But I'd say this is one item you can take off the menu. I eat super healthy, but even this is too green for me. The taste is just off. Sorry.

My vegetarian wife nearly ate this which is marked as vegetarian. The listing for this must be changed. I ate it -- it was pretty good, but I do eat meat. It is a fairly light side, and a good way to get some veggies in.

Beware! Not vegetarian! Great flavor but it has meat in it, which I was not expecting with a minestrone.
