You can get Pad Thai just about anywhere in the city. It's one of those dishes that when the craving hits, nothing else will do. Sometimes you want to enjoy those flavors but without the heavy noodles and sticky-sweet sauce. That was the idea behind this salad: Thai flavors in a light and fresh preparation. We marinate tofu in chili, soy, and lime. The tofu gets roasted and served over romaine, cabbage, carrots, bean sprouts, snap peas, and watermelon radish. A creamy cashew dressing brings everything together and roasted peanuts add crunch.
