Savoy cabbage leaves are blanched and stuffed with red quinoa, roasted cremini mushrooms, tofu, oregano and thyme. The cabbage rolls are slowly braised in a red bell pepper and tomato sauce. The dish is topped with roasted cabbage and lemon zest. Comforting and low carb!

This is an AMAZING dish with a lot of flavor-probably one of my favorites on munchery (make sure you like quinoa - duh!); I like spicy food so I even added some salsa picante.

The tomato sauce on the side was too spicy. I thought it was going to have meat, and instead it has quinoa. The cabbage was fine. I don’t like vegetarian foods and this is why. They take something really bizarre and try to substitute it for meat.

My 1st time having something like this. Liked the cabbage leaves and the flavor of the sauce. Did not care for the "filling", tho.
