For this dish we used lamb's distinctive flavor characteristics to our advantage. The t-bones get rubbed in assertive Middle Eastern spices, like sumac, cumin, and Aleppo pepper. What is Sumac? why was it rubbed all over my lamb? did not care for it. better to use olive and garlic. Love lamb.
