Creamy, cheesy grits are the starting point to this hearty vegetarian dinner. Sauté a mix of baby peppers with onions to serve over the soft corn mixture and top with a perfectly cooked, soft-boiled egg. A few ribbons of fresh basil sprinkled over the top and you’ve got dinner. All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, pepper, oil) and around 15 minutes to create this heavenly meal for two.

Delicious. Small peppers should arrive chopped. Start 3 pans --1 with eggs, 1 with water/milk, 1 with oil. Chop and add to pan 3 and stir. Make grits when milk boils. Plate grits, peel eggs, add veggies, top with basil.

I liked this dish. I sautéed the peppers with basil and red pepper flakes, instead of using those as toppings. I also added black pepper to the grits. Personally, I prefer spicy to sweet, but I'm sure it is good without those additions.
