Sweet Potato Overnight Oats

We didn't want to jump on the "pumpkin spice" bandwagon for this new fall flavor of overnight oats, so we asked some of our cooks for inspiration. They described a traditional Mexican breakfast meal of roasted sweet potatoes, mashed and served in a bowl with a splash of milk and a swirl dulce de leche caramel to sweeten things up. We tweaked the idea a bit and the result is exactly what we were hoping for. We hope that you enjoy it too!

Yuck! This was kind of savory and perfume-y in flavor. Also the texture was off. Gritty. I so appreciate risk taking in dishes as simple as oatmeal (I’ve created a BOMB PB&J recipe, btw), but this is a fail. Sorry.
