Tacos are always a winning meal and this unique vegetarian version uses chayote, a cool squash popular in Latin cuisine. Mini tortillas get warmed by you (so cute!) and then topped with the chayote, some queso fresco cheese, creamy avocado, and a drizzle of spicy house-made salsa verde. A bit of cilantro and you’ve got one heck of a tasty dinner! All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, pepper, oil) and around 15 minutes to create this easy and fun dinner for two.

Way too small for two people. There was only enough food for 4 tortillas. Need a veggie protein in there or on the side (beans).
