This dish begins with thin rice vermicelli noodles tossed with sauteed mushrooms, pickled daikon radishes, bok choy, and whole edamame beans. Tear Thai basil, cilantro and spearmint over everything and and toss in soy sauce. Finish with a squeeze of lime for a light & refreshing noodle bowl.
