Like a lot of people, I used to think tofu was boring. That was before I worked at Munchery and got a chance to work with it on a regular basis. I was surprised to find that it takes marinades well, and roasting it in the oven really locks in the flavor. For this dish, tofu takes an overnight bath in soy sauce, lime juice, and chilis. After roasting, it gets stuffed into lettuce wraps with a slew of veggies such as carrot, cucumber, pickled daikon, and Thai basil. Add the hoisin and pickled chilis for an extra kick. You'll satisfy your hunger, but won't be weighed down by the excess fat and animal protein.
