A vegetarian-friendly version of the classic French salad. Tofu—standing in for the traditional poached tuna—gets marinated in a puree of parsley, lemon juice and capers then lightly roasted. The salad is served with the customary components of butter lettuce, radishes, hard boiled eggs, cherry tomatoes, olives, sliced potato, and a tangy red wine vinaigrette. It won't transport you to the south of France, but it will have you saying bon appetit!

Pros: generous size, ample toppings, great olives and dressing. Cons: tofu tastes like normal tofu (marinade isn't absorbed), unseasoned potatoes. Unlike the photo, the egg comes in crumbles, so it isn't removable if you need a vegan alternate.
