In the colder months, when great local produce is few and far between, we like mixing it up with tropical fruits from far away. They are so naturally sweet that they don't need much manipulation, so we serve them as a fresh fruit salad. This one features compressed pineapple, mango, dragon fruit, carambola, kiwi, lychee fruit, and horned melon, served with a side of zesty dressing made with lime, mango, and coconut.
