We get our turkey from Diestel Ranch in the Sierra foothills. It gets roasted, chopped, and put atop a bed of Tuscan and Red Russian kale along with fuji apples, blueberries, shaved celery, and toasted walnuts. On the side: apple cider vinaigrette.
