Ingredients

Spiced Steak Fries

  • 1/2 teaspoon dried thyme
  • 1 teaspoon Spanish paprika
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried oregano
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons sugar
  • 2 pounds Idaho potatoes, cut into wedges

Cambodian Pork Burgers

  • 1 pound ground pork
  • 1/2 cup cilantro, chopped
  • 2 scallions, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons hoisin sauce
  • 2 teaspoons oyster sauce

Spicy Mayo

  • 1/2 cup mayonnaise
  • 2 tablespoons sugar
  • 3 tablespoons sambal oelek
  • 2 tablespoons ketchup

Serving

  • 4 brioche buns, toasted
  • Pickles
Directions

In a large bowl, combine the thyme, paprika, Cajun seasoning, oregano, olive oil, salt, pepper and sugar. Fold in the potato wedges, cover, and refrigerate for 30 minutes.

Preheat the oven to 450°F.

Transfer the seasoned potatoes to a baking sheet and roast for 15 minutes, or until crisp.

In a large bowl, gently combine burger ingredients until well mixed. Form into 4 patties.

Heat the oil in a skillet over medium heat. When hot, add the patties and cook for 4 minutes. Flip and repeat on the other side, until cooked to your desired doneness.

Serve the burgers on brioche buns with pickles and aioli.
