Ingredients

Parmesan Roasted Potatoes

  • 2 pounds Yukon Gold potatoes, unpeeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • ½ cup shredded parmesan cheese
  • ¼ cup chopped parsley
Directions

Preheat the oven to 400°F.

Toss the potatoes with oil, salt and pepper on a baking sheet.

Roast for 20 minutes or until golden brown.

Sprinkle shredded parmesan over the potatoes.

Roast for another 10 minutes.

Toss with parsley and serve.
