Tomato Sweet Corn Salad

Scatter vine-ripened tomatoes and sweet corn kernels on a bed of tender spring mix lettuce along with bright red onions and crumbled blue cheese.

Ingredients

Lemon Shallot Vinaigrette

  • 1 shallot, minced
  • 1 lemon, juiced
  • 2 tablespoons unseasoned rice wine vinegar 
  • 1 tablespoon tamari
  • 1 teaspoon Dijon mustard
  • 1/2 cup olive oil
  • ½ teaspoon salt, to taste

Salad

  • 4 cups spring mix
  • 1 cup corn kernels
  • 2 cups whole cherry tomatoes
  • 1 red onion, diced
  • ½ cup crumbled blue cheese
Directions

Place all vinaigrette ingredients other than the oil in a blender. Purée until smooth. With the motor running, drizzle in the oil until emulsified. Season to taste.

Combine the salad ingredients in a large bowl and toss with lemon shallot vinaigrette.
